As I watch the news about the horrific Gulf of Mexico oil spill, my heart goes out to all the Louisiana fishermen and shrimpers. Not only is their home being defaced, but their livelihood is being taken away. Louisiana is the number 1 producer of commercial shrimp in the United States, this will have a major impact on the economy there, as well as, affect the opportunity for me to use some of the best shrimp available in my dishes. I seized the opportunity to buy the last pound of gulf shrimp that was available at my local seafood market. I made spinach and cream cheese filled shrimp, wrapped in bacon. They were delicious!
