• A Healthy Week of Meals!

    Apricot Glazed Chicken

    For my most recent client, I was challenged to create a week of delicious meals that were healthy and low in calories.  This really isn’t that hard to achieve!  Natural whole foods are already delicious!  It’s really about how they are prepared and what you serve them with.  All of this week’s meals are in the 300-400 calorie range! That really is a good target for supper.  With these delicious meals, I know that my client will have no problem staying fit and helathy!


    First meal: Apricot Glazed Chicken Breast with greens dressed with an apricot vinaigrette, blueberries, goat cheese crumbles, and almonds.

    Ratatouille

    Second meal: Ratatouille which is a roasted medley of vegetables including onions, carrots, tomatoes, eggplant, zuchinni, and garlic, served on top of a bed of wild rice.

    Third meal: Maple Mustard Pork Chops with Acorn Squash Puree and green beans.

    Fourth: Chickpeas with broccoli and bacon.  This is a dish that is very Moroccan inspired.  The chickpeas are toasted and the bacon drippings are used to make a dressing for the whole dish!

    Fifth: Chicken Pinwheels stuffed with spinach, sun dried tomato’s, and goat cheese.  Served with roasted baby Yukon Gold potatoes with garlic and rosemary.

    I also added a healthy dessert made with frozen berries topped with a sweet, warm cream sauce!
